Recipe: Immune-Boosting Mushroom Soup

Ingredients:

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)
  • 1 pound of mixed functional mushrooms (like shiitake, reishi, lion’s mane, etc.), sliced
  • 1/4 cup tamari or soy sauce
  • 1 cup of vegetable broth
  • 2 cups of water
  • Salt and pepper to taste
  • 2 tablespoons of nutritional yeast (optional, for a cheesy flavor)
  • Fresh parsley, for garnish

Instructions:

  1. Sauté the veggies: Heat the olive oil in a large pot over medium heat. Add the chopped onion and sauté until it becomes translucent, about 5 minutes. Add the minced garlic and thyme and stir for another minute.
  2. Cook the mushrooms: Add the sliced mushrooms to the pot and cook until they start to brown, about 5 to 7 minutes. The mushrooms will release their juices — that’s flavor, so don’t worry!
  3. Add liquids: Stir in the tamari or soy sauce, then add the vegetable broth and water. Bring the mixture to a simmer.
  4. Blend (optional): If you prefer a smooth soup, you can use an immersion blender to blend the soup until it reaches your desired consistency. Alternatively, you can carefully transfer half of the soup to a countertop blender, blend until smooth, then return it to the pot.
  5. Season: Taste the soup and add salt and pepper as needed. If you’re using nutritional yeast for a cheesy flavor, stir it in now.
  6. Serve: Ladle the soup into bowls, garnish with fresh parsley, and serve warm.
